I have just imported the “Release Notes” app in my xwiki and testing it, but I haven’t found where to add the “release date” since it seems that is deactivated and grey out…
Could you pls help me?

Right now there’s no UI for setting that info AFAIR. Feel free to open a jira issue for it at Loading...
So right now you just need to go to a Release Notes page and edit in object mode. See http://platform.xwiki.org/xwiki/bin/view/Features/PageEditing#HAdvancedMode and http://platform.xwiki.org/xwiki/bin/view/Features/PageEditing#HObjectseditingmode
